Rooted in French culinary tradition, Andrei sharpened his craft in some of Europe’s finest kitchens, including 1 and 2 Michelin-starred restaurants. His career has spanned contemporary cuisine alongside visionary chefs like Guillaume Sanchez, as well as classical fine dining at iconic establishments such as La Chèvre d’Or. Beginning his journey under the mentorship of Chef Thierry Breton in Paris, he has carried forward a passion for both innovation and authenticity. Now based in London, he brings his creativity, curiosity, and love for food to inspire every dish at Muse.
Sébastien Pé, General Manager
Sébastien Pée is a seasoned hospitality professional with a lifelong passion for exceptional service. Trained in Belgium before moving to Paris in 2004, he refined his craft in some of the city’s most iconic establishments, including the Four Seasons Hotel George V, Pavillon Ledoyen and Le Bristol. These formative years instilled in him the precision, elegance and guest-focused mindset found only in three-Michelin-star environments. After relocating to London with his wife, Amy, Sébastien spent eight successful years at The Five Fields in Chelsea, further shaping his leadership style and commitment to creating memorable, personalised experiences. Now, as General Manager of Muse, he brings his depth of expertise, warmth and meticulous attention to detail to every aspect of the guest journey.
Elisa Marchini, Restaurant Manager & Head Sommelier
Elisa has an impressive background in wine and hospitality. Originally from the coast of Tuscany, Elisa’s passion for wine was ignited growing up on her family’s vineyard. Her career ties in beautifully with Tom’s experience, being both a protégée of Pierre Koffman and having worked at L’Atelier Robuchon!
